Recipe of the Month

Mango Salsa

Preparation Time: 10 minutes

Ingredients:

2  Mangos 1/4 inch diced (fresh or frozen)

4 Habanero Chili (seeded and chopped)

(be   careful, use gloves)

1  small red onion chopped

Juice of one lime

3/8  Teaspoon Cumin

Salt to taste

8  Springs of chopped Cilantro

Mix all together.

 

 

Black Bean Salsa

It's a hit at parties!!!

1  (15oz) can black beans, rinsed and drained

1 cup seeded, chopped tomato

1/2  cup chopped onion

1/4 cup chopped fresh cilantro

1 serrano pepper, seeded and chopped

1 clove of minced garlic

1 tbs balsamic vinegar

1/4 tsp. salt

1/8 tsp. pepper

Combine all ingredients in a medium bowl; toss well.  Let stand for one hour
